Pre-heat the oven to 200˚C/ 180˚C fan /Gas Mark 6.
If using pastry, unroll and place flat on baking sheet. Bake for 15 minutes in the preheated oven, or until puffed and golden. Once cooked, allow to cool and then break into small pieces.
Place ¾ of the broken pastry/palmier biscuits in the oven proof ramekin in layers. Sprinkle the coconut over the pastry.
. Pour the Renastep into a pan and stir in the cinnamon and vanilla. Heat gently but don’t boil.
Pour the heated mixture over the pastry/palmier biscuits in the oven proof dish.
Use the final ¼ palmier biscuits or pastry to top the surface of the dish.
Place dish in the oven and bake for 10 minutes, until the liquid bubbles at the edges.
Serve warm, topped with a small portion of almonds, pistachios and raisins if permitted.
