For the cake:
Preheat the oven 180°C/ fan 160°C/ gas mark 6. Grease and line a Swiss roll tin with baking paper.
Whisk the caster sugar and eggs in a large bowl (for around 5 minutes) until pale and light.
Sift the self-raising flour and cocoa powder together into the mixture.
Gently combine with a spatula (it is important not to over-mix to keep the cake light and fluffy).
Pour the mixture into the lined Swiss roll tin. Spread the mixture gently across the baking tray ensuring it is level.
Bake for 10-12 minutes until firm but springy to touch and the edges of the cake are starting to shrink away from the sides of the tin.
Meanwhile put a clean tea towel on your work surface.
Remove the sponge from the oven and turn it out onto the tea towel whilst it is still warm. Carefully peel away the baking paper from the bottom of the sponge.
Roll the sponge up from the short end, using the tea towel underneath to help. Leave the sponge to cool.
For the buttercream:
Add the softened butter and icing sugar to a large mixing bowl and whisk until smooth, light and fluffy
Add in the melted Vitabite and semi-skimmed milk. Whisk until smooth.
Assembly:
Unroll the sponge, spread a thin layer of buttercream and carefully roll up tightly again
Cover the sponge with the remaining buttercream.
For the decoration:
Melt the Vitabite and pour ¾ onto baking paper, smooth to create a disc that will fit the end of the Yule log. With the remaining Vitabite, pour onto the parchment in the shape of 2 antlers (connecting the face and antlers together).
While the Vitabite is still soft add on 2 edible eyes and 1/2 glace cherry for the reindeer's shiny nose! Leave to set.
Once set, add the reindeer's face onto the end of your Yule log and decorate the body with permitted sprinkles
