Chicken Curry

Ingredients

  • 1 whole chicken, skin removed, cut into small parts
  • ¼ cup lemon juice
  • 2 tsp curry powder
  • 1 medium garlic clove, chopped
  • ½ tsp black pepper
  • ½ tsp thyme
  • 2 tbsp vegetable or olive oil
  • 1 cup of water

Method

  1. Cover the uncooked chicken with lemon juice. 

  2. Mix the seasoning together and rub onto the chicken.

  3. Allow to marinate in the refrigerator for 1 hour (or preferably overnight).

  4. Add the cup of water to the pan and simmer until fully cooked and tender.

  5. Serve over hot rice.
